First, our locally sourced, fresh cut potatoes are gently blanched at a lower temperature to soften the core, creating that melt-in-the-mouth, pillowy interior. After a brief rest, they hit the hot beef dripping for a second, high-temperature fry. This 'seals' the chip, creating a signature golden-brown shell that stays crisp all the way to your first bite. It’s more labour-intensive, but once you taste the difference, you’ll never go back to single-fried chips again".
